Yep, you can make this single serving Easy Blueberry Cobbler recipe in ONE MINUTE!! And it was quite tasty if I do say so myself! Thumbs up from the family and they’ve actually been requesting these simple and easy blueberry cobblers on a regular basis now.

You need just few minutes to prepare these cobblers, but each blueberry cobbler only takes ONE minute to cook in the microwave. These single serving berry cobblers are perfect to make if you only want to make one or two servings instead of making a huge pan in the oven.
I like to put all the ingredients out on the counter and have everyone make their own. That way they can make it the way they like, and I don’t have to cook for everyone, haha!
These single serving cobblers are also great if you have a late night craving and need something quick! I cut way back on the sugar compared to other cobbler recipes and used simple ingredients but I bet you won’t miss it all!
These Easy Blueberry Cobblers are meant to be an easy QUICK fix if you’re craving something sweet. No, it’s NOT just as good as a big sugary gooey blueberry cobbler fresh out of the oven that took all day to make (so don’t send me nasty emails…), but it’s still tasty especially with a little ice cream or whipped cream on top.
How to Make Blueberry Cobbler:
This easy blueberry cobbler recipe comes together quick!
First, mix together all the dry ingredients including the flour, sugar, and baking powder. Add a pinch of salt if you’d like. You could also add a little cinnamon or spices.
You can try a gluten-free baking flour, but I have not tried, so can’t guarantee how it compares.
I didn’t add a lot of sugar but you could add more or use a sugar substitute.
Then mix in your milk and melted butter to the batter.
Place your blueberries in the bottom of your ramekin. I used fresh blueberries, but you could also use defrosted frozen blueberries.
You’ll need a large ramekin (8 oz.) to bake the blueberry cobbler in. You could also substitute a large microwave safe mug or small bowl. This would work well like a mug cake recipe. You may need to adjust the cooking time if you use different size containers.
I did not add any sugar to my blueberries, but if you like your blueberry cobblers really sweet add a little sugar or even maple syrup or sugar substitute. Or if your blueberries aren’t very sweet, you may want to add a little more sweetener.
You could also add a little cornstarch or flour if you want to the blueberries so the fruit “juice” thickens a bit. I really didn’t think it needed it, but you may want to experiment a bit.
Press down on your blueberries a little with the back of a spoon or fork to make room for the topping. For a little extra flavor you could add a little vanilla extract, almond extract, or even maple extract to the blueberries.
Spoon your cobbler topping batter on top of the blueberries in a nice even layer.
Place the ramekin on top of a small microwave safe plate JUST in case the blueberries boil over a little. Sometimes mine do boil over just a little, sometimes they don’t.
Microwave the blueberry cobbler on high for 30 seconds, check on it, then microwave another 30 seconds.
You may have to adjust the time slightly for your particular microwave. Microwaving for 2 intervals of 30 seconds seemed to help prevent the blueberries from boiling over too much by giving them just enough time to cool down slightly.
Top this homemade blueberry cobbler with your favorite ice cream, whipped topping, or whipped cream if you’d like. And there you go, an easy single serving microwave blueberry cobbler ready in no time.

Easy Blueberry Cobbler Tips:
- Blueberries are at their best in the summer, so give this a try with fresh sweet ripe blueberries. Other times of the year, you can also make this blueberry cobbler with frozen blueberries. You may want to defrost them first.
- You can try substituting other types of fruit, but depending on the type of fruit you may need to precook the fruit a little first.
- You can easily add your favorite spices and flavoring to both the blueberries and cobbler topping. Things to try would be cinnamon, nutmeg, fresh orange zest/juice, fresh lemon juice/zest, flavored extracts (vanilla, almond, maple, etc.), maple syrup, and anything else you can think of!
- Microwaves can vary, so you may need to adjust the cooking time and experiment a little.

Easy Blueberry Cobbler in One Minute
Ingredients
- 1/4 cup all-purpose flour
- 2 teaspoons granulated sugar
- 1/4 teaspoon baking powder
- pinch of salt
- 2 tablespoons skim milk (or milk of choice)
- 2 teaspoons unsalted butter melted
- 1/2 cup fresh blueberries
- Toppings (optional): ice cream, whipped topping, or whipped cream
Instructions
- In a small bowl, mix together flour, sugar, baking powder, and salt until well combined. Mix in milk and melted butter until just combined.
- Place blueberries in bottom of a large (8 oz.) microwave safe ramekin or microwave safe mug. Press blueberries down slightly with the back of a fork to break up. Spoon batter on top of blueberries.
- Place cobbler on top of small microwave safe plate in case blueberries boil over. Microwave on high for 30 seconds, check on cobbler, then microwave another 30 seconds. Adjust baking time as needed for your microwave.
- Top with your favorite ice cream, whipped topping, or whipped cream if desired.

I am gluten free so I used coconut flour. I needed a bit more milk for that. And, I baked this on my toaster/convection oven for 15 minutes. Golden brown perfection. I need one of those kitchen torches that was suggested….it would be quicker. Yummy.

recipe is dec, but the microwave doesnt do a damn thing. need yourself a heat gun to really put a good crisp on the top. also could use some vanilla.

Of course it won’t get crisp on top. You literally do need to use a toaster oven or oven for that.
Don’t give this recipe a bad rating because you used it expecting the microwave to do something the microwave can’t do.
It’s just lowering the overall rating due to user error.

Well, it depends on what you like. You could add almond extract which would have a stronger flavor than vanilla. Citrus zest such as orange zest would be nice. Or even adding some chopped nuts perhaps.
