This Mediterranean Feta & Shrimp Pasta is snappy enough to make for any night of the week and it is delicious! It’s loaded with shrimp, tomatoes, feta, fresh asparagus, pasta, and fresh parsley or basil! Lots of variation possibilities too! This recipe is yet another buffalo recipe for my buffalo addiction. I wonder if they have therapy for those of us addicted to “buffalo” anything and everything??? This Buffalo Shrimp Grilled Cheese was SO good!! You could easily substitute chicken or could probably omit the meat all together and add more veggies if you’re a vegetarian. My apologies to those of you rolling your eyes and thinking “oh great, ANOTHER buffalo recipe!”. For those of you sick of my buffalo recipes, don’t worry, new ideas coming next week. Tomorrow I’ll be a guest on the Rachael Ray Show for “Waffle Week”! It was an incredible experience to be part of “Waffle Wars” with one of my favorite original recipes, Crunchy Chicken Stuffed Waffle Pops! It was a fabulous experience, but I can’t say much about it until after the show airs. To celebrate “Waffle Week” I thought I’d come up with a new fun waffle recipe! These Caribbean Shrimp Stuffed Waffle Pops are just as fun as my Crunchy Chicken Stuffed Waffle Pops but a whole new twist. Caribbean seasoned shrimp are coated in a corn waffle batter that has jalapeños and onions then paired with a sweet mango cilantro dipping sauce. These “pops” are sweet and spicy and great as an appetizer or entrée!
