Pizza Pinwheels
Ingredients
Pizza Dough:
- 2 3/4 cups all purpose flour to 3 1/4 cups
- 1/4 ounce envelope active dry yeast
- 1 teaspoon granulated sugar
- 1 teaspoon salt
- 1 cup warm water (about 105 – 115 degrees F)
- 3 Tablespoons olive oil divided
Pinwheels:
- 1/3 cup tomato sauce
- 2 cups shredded mozzarella cheese or shredded pizza blend cheese
- 1/4 pound thinly sliced deli pepperoni
Instructions
Pizza Dough:
- In a large bowl mix together 2 3/4 cups of flour, yeast, sugar, and salt.
- Add warm water and 2 Tablespoons of olive oil to dry ingredients. Stir with wooden spoon until dough just comes together and forms soft ball. Mix in additional flour as needed 1 Tablespoon at a time.
- Place dough onto a lightly floured work surface. Knead dough until smooth and elastic, about 6-8 minutes.
- Grease a large bowl with remaining 1 Tablespoon of olive oil. Add dough, turn to coat, then cover bowl with plastic wrap. Cover with a towel, and place in a warm draft-free place until dough has doubled in size, about 1 hour.
Pinwheels:
- Preheat oven to 375 degrees F. Lightly grease 2 baking sheets with olive oil or line with parchment paper.
- Divide the pizza dough into 2 equal pieces. Roll out each piece of dough, one at a time, on a lightly floured surface to a 10×12-inch rectangle.
- Spoon the tomato sauce over each rectangle of dough, leaving a 1/2-inch boarder aroudn the edges. Sprinkle the cheese over the sauce, then top with pepperoni. Starting at the long end, tightly roll up each pizza dough rectangle. Pinch the dourgh alond the seam to seal. Using a sharp knife, cut the dough into 1-inch rounds. Place the rounds on the prepared baking sheets about 2-inches apart.
- Bake the pinwheels at 375 degrees F for about 15 to 20 minutes or until golden brown.
Notes
- Instead of mixing and kneading this dough by hand you can use a stand mixer with a hook attachment.
- Be sure your water is not too hot or you may kill the yeast.
- There are different types of yeast so be sure to get the active dry yeast.
- Be sure to roll the dough very tight and tightly seal so that the pinwheels don’t fall apart.
- Deli pepperoni tends to work better than the small prepackaged pepperoni since the slices are larger and easier to cut when cutting the pinwheels.
- Instead of olive oil, you can use vegetable or canola oil in a pinch.
- You can use your favorite shredded or thinly sliced cheese.
