I have a delicious and easy Caribbean Tacos recipe for you today! My kids love “Taco Tuesday”! These Caribbean Tacos are a quick and easy dinner that you can make in less than 30 minutes! They are full of fresh flavors including mango, lime, and cilantro and also a bit sweet and a bit spicy! I’m a bit obsessed with Caribbean inspired recipes, and excited to add this Caribbean tacos recipe to the line-up of my Caribbean inspired recipes!

These Caribbean Tacos can be on the table in less than 30 minutes! Caribbean tacos in 30 minutes, crazy right? Each component of the recipe (meat and coleslaw) can also be made ahead of time and stored in the fridge for a day or two.

To start, you’ll need to brown some meat in a skillet. I chose ground pork for these Caribbean Tacos because I thought it paired well with all the flavors, but if you can’t have pork, ground chicken or beef will also work. While your meat is browning, prepare the sauce by placing everything in a blender (or food processor) and process until smooth. I used McCormick Caribbean seasoning and Sabra salsa.

When the pork is done cooking, drain the excess grease out of the pan then stir in the sauce. Bring everything to a simmer and simmer about 5-10 minutes.

While the pork is simmering, prepare the coleslaw. The coleslaw can also be made ahead of time if you want it more on the soft side, rather than crunchy. I personally like the crunchy slaw with the soft meat and soft tortillas.

To serve, place the pork in tortillas and top with the coleslaw. Garnish with fresh cilantro if you’d like and serve! I used flour tortillas, but any kind of tortilla will work! Enjoy!

Instructions

  • Place pork in large nonstick skillet over medium-high heat and brown meat while crumbling until cooked through, about 5-7 minutes. Drain excess grease, then place back on heat.
  • Meanwhile, place all sauce ingredients in blender (or food processor) and blend until smooth. Pour over pork, stir to combine, bring to a simmer, and cook about 5-10 minutes.
  • While pork is simmering, place coleslaw mix, red onion, 1 chopped mango, and cilantro in large mixing bowl and mix to combine. Drizzle olive oil, honey, and lime juice on top and stir to combine.
  • Spoon filling into tortillas and top with coleslaw and cilantro to serve.

Notes

SNAPPY TIPS: Cole slaw and pork sauce can be made ahead of time and refrigerated for 1-2 days.
SNAPPY SUBSTITUTIONS: Substitute ground chicken or beef for the pork. You can also substitute shrimp, but do not precook the shrimp, just simmer in the sauce until cooked through.
