School is starting next week. So bittersweet. Part of me is going to miss having the kids around and the other half of me will definitely NOT miss the fighting and bickering. Can you relate? As a fun activity (and to keep them occupied for a few minutes…) we decided to make this Caramel Cheesecake Dip as a special treat. It probably should be called Salted Caramel Cheesecake Dip but you could definitely leave the salt out.

Not a lot of ingredients in this Caramel Cheesecake Dip. To make it I used cream cheese, caramel ice cream topping, homemade whipped cream, vanilla, and salt. That’s it!

A few quick tips…

Be sure your cream cheese is softened to room temperature so your dip won’t be lumpy. You could use reduced fat cream cheese but the consistency of your dip may be a little different.

I used a thick pre-made caramel ice cream topping but you could also use a homemade caramel or Cajeta.

I made a homemade whipped cream by whipping 1 cup of heavy cream with a mixer but you could also use a defrosted whipped topping if you’d prefer but the dip will turn out a lot sweeter.

Not one for salt? Leave it out, no problem!

Instead of vanilla extract you could use any of your favorite extracts. Almond extract would be delicious, or even a small amount of your favorite liqueur! Yum!

The dip can also be made ahead and stored in a container in the refrigerator for a few days. Perfect for fall parties and holidays!

Spoon the dip in a cute serving bowl (not like the one I used here for these quick pics…) and you’re all set! We enjoyed this dessert dip with graham crackers and apples but it would be good with other types of fruit, vanilla wafers, or really just by itself like a pudding/mousse.

It would also make a great frosting or filling for a cake like a chocolate cake! Some mini chocolate chips or chopped nuts would also be great on the dip! So many variation possibilities!

Hope you enjoy this easy Caramel Cheesecake Dip!
