Watermelon Poptini Cocktail Recipe, an easy summer drink with Pop Rocks, watermelon, and vodka! After I made my Mini Strawberry Shortcake Poppers recently, I couldn’t quite get over my fascination with Pop Rocks (which would be my way of saying I couldn’t get enough of those darn little candies!!!).  Pop Rocks work great to line glass rims for your favorite drinks. I had some fresh watermelon in the house AND Watermelon Pop Rocks so what was a girl to do??? I went to the nearest liquor store, bought some watermelon vodka, and next thing I knew I was making a Watermelon Poptini! :)

Watermelon Poptini

A fun refreshing summer drink using fresh watermelon and Pop Rocks!

Yield 2 drinks

Ingredients
 

Instructions

  • Place watermelon, vodka, 2 tablspoons honey, and lime juice in blender. Process until smooth. (If you notice a few watermelon seeds, pour through strainer if desired.)
  • Rub a little honey on the edges of martini glasses then dip into Pop Rocks.
  • Shake drink with ice if desired then strain into martini glasses.
  • Makes 2 drinks

Notes

SNAPPY TIPS: Try to get out as many watermelon seeds as you can before you put the watermelon in the blender, but if you can’t get them all, just strain the drink before serving.
SNAPPY SUBSTITUTIONS: You could substitute a little orange or lemon juice instead of the lime juice.

    HI Lisa! Not a silly question! Our grocery store actually sells them in the candy aisle although I would have never noticed them if I wasn’t looking for them as they were on the bottom shelf and kind of hidden. But the first place I found them recently was at Christmas Tree Shop (not sure if you’re familiar with them? Crazy store!) and they had a “variety” pack of them with their “movie” candy!

  9. Silly question, but where did you find the pop rocks? I haven’t seen them in ages! Granted I haven’t been looking, but I don’t remember them last time I was down the candy aisle at the grocery store either… :)
