Truffle Fries

Oh these Truffle Fries are so easy to make and quite delicious if I do say so myself. I have a thing for baked french fries and potato wedges (see my Homemade Potato Wedges with Homemade Taco Seasoning and my Greek Fries with homemade Tzatziki. So easy to make baked fries at home!

What are Truffle Fries

If you’ve never had truffle fries, they are generally thin cut deep-fried potatoes topped with truffle oil and sometimes fresh herbs and spices, garlic, cheese, or other toppings.

Truffles as in mushrooms, not chocolate. haha!

I love them, but they can be a bit greasy if they’re deep-fried AND covered with truffle oil. So thought I’d try making a healthier baked version.

This version still uses thin cut potatoes but baked in the oven until crispy then lightly drizzled with truffle oil and topped with chopped fresh parsley and Parmesan cheese.

How to Make Truffle Fries

You’ll need to start with some fresh large baking potatoes. Wash and scrub them well, then dry them.

Cut the potatoes into slices, then cut each slice into thin strips. Be sure to use a good sharp knife.

If you’d rather not cut the potatoes by hand you might be able to use a food processor (if you have a blade that will cut long strips) or a mandoline slicer. You can even buy a French Fry cutter if you want to go all out.

Don’t worry if they’re not cut perfectly. Just try to make them roughly the same thickness so they cook evenly.

Unless you’re making A LOT, I personally like cutting by hand instead of cleaning the additional kitchen equipment.

Once you have your potatoes cut into thin long strips, toss them in a large bowl with a little olive oil. You can use any oil you’d like such as vegetable or canola oil

Sprinkle a little salt and pepper on top, and toss again. Or a little fry seasoning would be delicious too.

You can add any dried herbs or spices you’d like such as onion or garlic powder. I personally find they can take away from the truffle flavor, but personal choice.

How to Bake French Fries

Place your cut potatoes on large baking sheets that have been lined with parchment paper. You don’t have to use parchment paper but I find it easiest so that the potatoes don’t stick to the pan and the potatoes are still crispy.

Be careful using silicone mats or nonstick pans because your potatoes may not crisp as much.

Heat your oven to 425 degrees F. I find higher temperatures work better for extra crispiness.

Bake your fries for about 20-30 minutes. Check on them about halfway through and flip them over as best you can. I like to place the fries in the bottom of the oven so that the bottoms are close to heat and get crispy.

Depending on how thick you cut your potatoes you may need to adjust the baking time so be sure to check on them if unsure.

When your fries are done, take them out of the oven and drizzle with a little truffle oil. A little goes a long way so no need to go crazy with the drizzling.

Top with some freshly grated Parmesan cheese and some chopped fresh parsley. Good quality Parmesan is the way to go for these fries!

Serve the fries right away!

You might want to make more than you think you need because they tend to go fast! Just wish I had more room in my oven.

You can also try making these in an air fryer. I bet they’d be fabulous!

As much as I love dipping my fries into something, they don’t really need a dip. Although homemade ranch is definitely an option.

Instructions

  • Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper.
  • Cut potato into thin slices, then each slice into long thin strips. Place potato strips into a large mixing bowl and toss with olive oil, salt, and pepper. 
  • Place potato strips in a single layer on parchment paper lined baking sheet leaving a little room between each strip.
  • Bake potatoes in bottom of the oven at 425 degrees F for about 20-30 minutes, flipping over halfway through baking.
  • Drizzle fries with truffle oil and top with Parmesan cheese and parsley. Serve immediately.

Notes

SNAPPY TIPS: Baking time may vary depending on how thick you cut your fries. You can use a French Fry cutter or mandoline slicer if you’d prefer.
SNAPPY SUBSTITUTIONS: Instead of salt and pepper, or in addition to, you can use your favorite spices and herbs.

  1. I am new to using truffle oil. I am very excited to try to make these truffle fries! Is there a difference in white or black truffle oil or which one did i get ?

    1. You could use either, but I’d suggest starting with the white.

  2. Yes, I LOVE truffle fries. I have some truffle salt that I’ve been using, but I think I need to try it with truffle oil for extra flavor!

      1. Truffles are mushrooms so I would say it tastes like that. You could really use any flavored oil if you’d like instead.
