We have been addicted to homemade potato wedges lately! These Oven Baked Potato Wedges with taco seasoning are easy to make, kid-friendly, and delicious! Don’t worry they don’t really taste like tacos. The taco seasoning gives them a nice salty spicy taste that my whole family loved.

How to Cut Potato Wedges

The only hard part about making potato wedges is cutting them. But I hate to even say that, because it’s really not that hard so here’s how to cut potato wedges…

Start with good baking potatoes that are all about the same size. Give them a good wash and scrub to get some of the excess dirt off.

Cut each potato in half lengthwise. Then cut each half in half again lengthwise. Then cut each quarter in half again lengthwise. Be sure to cut from the top of the wedge along the point.

You should have 8 wedges for each potato. However, if your potatoes are really big or small, you may want to cut your potatoes into more or less wedges.

How to Make Potato Wedges

Once you have your potatoes cut into wedges, you’re ready to season them up!

First, make sure your oven is preheated. I usually bake these at about 400 degrees F. You could probably go even hotter like 425 or 450 for a shorter baking time. If you go any lower though, you may not get a really crispy outside.

Line two large baking sheets with parchment paper. You could probably do these right on your pan or spray some aluminum foil, but I love the easy cleanup with parchment paper and it helps keep the bottom of the potatoes crispy.

Place the potato wedges in a large mixing bowl. Toss with some olive oil (or vegetable or canola oil). You could even use a flavored oil. That would be delicious!

Once your potatoes are well coated with the oil, sprinkle the taco seasoning on top. You can use a store-bought packet of taco seasoning or use a homemade taco seasoning. Toss the potatoes with your hands or a large spoon until they’re well coated.

Place the potato wedges in a single layer on your baking sheets leaving a little room between each one. Do NOT pile them all on top of each other. A single layer with a little room is the best way to go to get these potato wedges nice and crispy.

Bake the potato wedges for 20 minutes then flip the wedges over, rotate the pans in the oven from where they were, and bake the potato wedges another 15 to 25 minutes or so until the potato wedges are crispy on the outside and soft and baked through on the inside.

My kids loved dipping these Oven Baked Potato Wedges into some homemade ranch dressing. I have to say, I loved it too! Sour cream would be great to dip these wedges into as well. Or sour cream mixed with a little salsa would be good as well.

Like I said above, don’t worry, these potato wedges do not taste exactly like tacos. Although that would be kind of nice I think. The taco seasoning gives them a nice salty and slightly spicy (but not too spicy…) flavor.

You can use any type of taco seasoning you’d like or even your own seasoning mixture. If you are using your own seasoning, I’d suggest putting more on than you think you need for full flavor.

  • Preheat your oven to 400 degrees F. Line two baking sheets with parchment paper.
  • Cut each potato in half, then each piece in half again, and again until you have 8 wedges from each potato. Place the wedges in a large mixing bowl.
  • Drizzle oil over potatoes then toss gently to coat. Sprinkle top of potatoes with taco seasoning and toss again to evenly coat potato wedges with seasoning.
  • Place wedges on lined baking sheets. Bake at 400 degrees F for about 20 minutes, turn wedges over and rotate pans, then bake an additional 15-25 minutes or until crispy on the outside and cooked through.

Notes

SNAPPY TIPS: For best results, make sure you use good baking potatoes and that your potatoes and wedges are about the same size for even baking. We love dipping these wedges in homemade ranch dressing!
SNAPPY SUBSTITUTIONS: Instead of taco seasoning, you can use your favorite seasoning combination.

    The only thing I suggest is after you cut your wedges, brine them for 1 hour or 3 – 4 hours if you have time. Completely dry potatos then season and roast.
