Peanut Butter “Mousse” & Strawberry Parfaits recipe for the first day of spring, who’s excited?? I AM! When I think of spring I start thinking about fresh fruit and vegetables including strawberries! Even though we get some great California strawberries year-round, they looked extra good this week so I knew what recipe I would share with you all!
These Peanut Butter “Mousse” & Strawberry Parfaits have less than 200 calories and they’re delicious, easy to make, 5 ingredients, and they will fill you up!!! You could easily make a bunch of these ahead of time and store in the fridge. I’ve also been known to have one of these for breakfast!
For these parfaits, I combined some fat-free Chobani fat-free Greek yogurt, a little Jif natural peanut butter, vanilla extract, Cool Whip whipped topping, until combined. Then layered with some fresh strawberries in a mason jar! Less than 200 calories!! This also fills me up for HOURS! The little bit of whipped topping is just enough to change the consistency to more of a “mousse” like consistency rather than yogurt. 2 tablespoons of regular Cool Whip only has 25 calories! Delicious!
You can change the fruit or add a little more peanut butter but just know that the total calories will change. The way I made it added up to about 185 calories. Different brands and varieties will also change your calorie count but change-it up to fit what you like!

Peanut Butter "Mousse" & Strawberry Parfaits
Ingredients
- 1/2 cup fat-free Greek yogurt
- 2 teaspoons peanut butter
- 1/8 teaspoon vanilla extract
- 2 tablespoons regular whipped topping
- 1/2 cup chopped or sliced strawberries
Instructions
- In a small bowl mix together yogurt, peanut butter, and vanilla. Fold in whipped topping.
- Layer yogurt mixture with strawberries in mason jar, cup, or bowl.
