  • The texture is spot-on. The filling sets up beautifully without being dense or heavy, and the crust holds together without crumbling. Every slice looks clean and polished.
  • This recipe is wonderfully low-effort. A quick crust, a one-bowl filling, and the oven does the rest. Most of the time is hands-off chilling.
  • These bars are perfect for entertaining. They’re easy to slice, easy to serve, and taste even better when made ahead, which is always a win.

Step Three: Make the Filling
In a medium bowl, beat the egg yolks and key lime zest with an electric mixer for about 2 minutes, or until the mixture looks frothy and light. Beat in the sweetened condensed milk until smooth, then add the key lime juice and mix until fully blended and slightly thickened.

Key Lime Pie Bars FAQ

How should I store Key Lime Pie Bars?
Store in an airtight container in the refrigerator for up to 4 days.

Can I freeze Key Lime Pie Bars?
Yes. These bars freeze well for up to 2 months. Thaw in the refrigerator before serving, or enjoy partially frozen for a cool treat.

How long will Key Lime Pie Bars last?
They’re best within a few days but hold their texture well when refrigerated.

Substitutions?
Use regular limes or bottled key lime juice if fresh key limes aren’t available. You could use other citrus instead if you’d like, such as lime, lemon, or orange.

Can I use low-fat ingredients?
Full-fat condensed milk and eggs give the best texture, so low-fat substitutions are not recommended.

What else can I add to this recipe?
Try a coconut graham crust or add a thin layer of whipped cream on top after chilling. You could also add some finely chopped macadamia nuts to the crust. For a brighter green color, you could add a little food dye to the filling. You can add a little vanilla extract or other flavorings to the filling if you’d like.

Can I make this vegan/vegetarian/low carb/gluten-free?
Here are some suggestions, but I can’t guarantee results. Be sure as always to check particular brands and ingredients if you’re following a specific diet or have diet restrictions or allergies.

Vegan – Use a dairy-free condensed milk alternative and egg substitutes.

Vegetarian – It’s vegetarian. Be sure to check individual brands/products just to be sure though.

Low-Carb – You can try a sugar substitute and a low-carb crust.

Gluten-Free – Use gluten-free graham crackers for the crust.
