Let’s talk about today’s Frozen Watermelon Citrus Daiquiri… My 4-year-old loves going to the grocery store with me and she’s usually very well-behaved (I know, I know, you all hate me for telling you this). I usually let her pick one thing while we’re at the store and this week she wanted watermelon (I know, I know, you now REALLY hate me that she picked something healthy).
BUT before you totally hate me, I will tell you that she quickly got bored eating the watermelon so I was left with a fridge full of chopped watermelon. What’s a girl to do, but make a cocktail, right???
I used orange juice in this drink, because that’s what we had in the house but lime would be fabulous! We also didn’t have any flavored liqueurs on hand, but an orange or watermelon flavored liqueur I’m sure would be great as well! Now close your eyes, and pretend you’re on vacation….
Frozen Watermelon Citrus Daiquiri
- 2 cups chopped watermelon seeds removed
- 1/3 cup rum
- 1/4 cup fresh orange juice
- 3 tablespoons water
- 2 teaspoons granulated sugar
- Garnish (optional): orange slices
- Place watermelon in a single layer on a plate and freeze for about 1 hour or until solid.
- Place watermelon, rum, orange juice, water, and sugar in blender and process until smooth. Garnish with orange slices if desired.
