Double Chocolate Fudge Cinnamon Cookies recipe, an easy cookie recipe with lots of chocolate and cinnamon! Kids had yet another snow day yesterday and I somehow got suckered into baking some cookies. When I pulled out the choices, chocolate chips or cinnamon chips, my 6 year-old looked up at me and asked why we couldn’t use both. I didn’t have a good answer, so next thing I knew we were making up a recipe for chocolate and cinnamon cookies. These cookies are BIG, THICK, and packed with chocolate and cinnamon! Chewy on the outside, soft on the inside!
These cookies are full of chocolate and cinnamon, all delicious just the way they are. However, I think next time I make them I think I’ll try adding a little strongly brewed coffee to deepen the chocolate flavor a bit. I used regular unsweetened cocoa powder and dark chocolate chips but you can use any kind of chocolate chip or dark cocoa powder if you want.
I actually was going to use dark cocoa powder but grabbed the wrong container out of the cupboard, oops! If you haven’t used cinnamon chips before they are right there next to all the other chips in the baking section of your grocery store.
I like to use an ice cream scoop to measure out all the cookies. My scoop is about the same as 2 tablespoons. You can make smaller cookies but be sure to decrease the cooking time.
These cookies are big and thick and just the way I like them! Chewy on the outside and soft on the inside!
Double Chocolate Fudge Cinnamon Cookies
Ingredients
- 2 cups granulated sugar
- 2 cups brown sugar packed
- 2 cups unsalted butter (4 sticks), melted & cooled
- 4 large eggs
- 2 teaspoons vanilla extract
- 6 1/4 cups all-purpose flour
- 2/3 cup unsweetened cocoa powder
- 2 teaspoons salt
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- 12 ounces semi sweet chocolate chips
- 10 ounces cinnamon chips
Instructions
- Preheat oven to 350 degrees F. Line baking sheets with parchment paper or silpats; or lightly spray with nonstick cooking spray.
- In large mixing bowl beat together granulated sugar, brown sugar, and melted butter with electric mixer on medium speed until well combined. Beat in eggs and vanilla until well combined.
- In separate bowl whisk together flour, cocoa, salt, baking powder, baking soda, and cinnamon until well combined. Beat into butter mixture until combined. Stir in chocolate and cinnamon chips.
- Spoon cookie dough into about 2 tablespoon balls and place on baking sheets about 3 inches apart. Bake at 350 degrees F for about 13-17 minutes or until lightly browned around edges. Cool on racks.

I just took the first batch of these cookies out of the oven (only made a half batch because I didn’t have enough flour). Y.U.M. I’m not sure there will be any left in the morning to take to work…
