Banana Bread Doughnut Twists & Wilton Giveaway

What do you get when you cross banana bread with a doughnut?  Why a Banana Bread Doughnut Twist, of course!!  These baked doughnuts have all the great taste of banana bread but in the shape of a fun twist doughnut!  I topped the doughnuts with a cream cheese glaze and cinnamon nuts.  These easy Banana Bread Doughnut Twists are great for dessert, snack, or even a special breakfast.  Hungry yet? These Banana Bread Doughnut Twists are super easy to make and they’re BAKED not fried!  So you don’t have to worry about making a mess in your kitchen with all that oil and frying!  To start, lightly spray Wilton‘s Doughnut Twist Pan with nonstick spray.  Love this pan!  Can’t wait to try some other recipes in it like other doughnuts, quick breads, cakes, etc.!

Start making your batter.  Mix your dry ingredients together.

Mix your wet ingredients together except the buttermilk.

Alternate adding the dry ingredients and the buttermilk into the rest of the batter.

Fill the cavities about 2/3 full with the batter.

Bake the doughnuts for about 18-22 minutes or until golden brown and a toothpick inserted in the middle comes out clean.  Let them cool a few minutes then flip the doughnuts over onto a cooling rack.  Mine all came out with no problem and no sticking.  Aren’t they adorable??  What a fun pan!

While the doughnuts are cooling, make your cream cheese glaze and cinnamon nuts.  Drizzle the glaze on top (or next time I think I’ll just dunk the whole top of the doughnut in the glaze) and sprinkle the nuts on top.  Instead of nuts you could also use Wilton‘s sprinkles or colored sugars for a colorful treat!

A fun combination of banana bread and doughnuts!
Ingredients
Doughnuts:

  • 2 cups all-purpose flour
  • 1½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 4 tablespoons unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 eggs
  • 1 cup mashed ripe bananas (about 2-3 bananas)
  • 1 teaspoon vanilla
  • ⅓ cup buttermilk
Cream Cheese Glaze:

  • 3 ounces cream cheese, softened
  • 1 tablespoon unsalted butter, softened
  • ½ cup powdered sugar
  • ½ teaspoon vanilla
  • 2-3 tablespoons milk (or buttermilk)
Nuts:

  • ½ cup toasted chopped pecans or walnuts
  • ¼ teaspoon ground cinnamon
Instructions
  1. Preheat oven to 350 degrees F. Lightly spray a Wilton 6-cavity Doughnut Twist Pan with nonstick spray.
  2. In a large mixing bowl, mix together flour, baking powder, baking soda, ½ teaspoon cinnamon, and salt until well combined.
  3. In another large mixing bowl, beat together 4 tablespoons butter and granulated sugar until well combined. Beat in eggs one at a time. Beat in bananas and 1 teaspoon vanilla. Alternate beating in dry ingredients and buttermilk into bowl until ingredients are just combined being careful to not overmix.
  4. Spoon batter into prepared pan until each cavity is about ⅔ full. Bake for about 18-22 minutes or until golden brown and a toothpick inserted into middle comes out clean. Set aside to cool.
  5. Meanwhile, mix together cream cheese, 1 tablespoon butter, powdered sugar, vanilla, and 1 tablespoon milk until well combined. Add additional milk as desired for thinner consistency. Drizzle glaze on top of doughnuts or dip top of each doughnut into glaze as desired.
  6. In a small bowl mix together nuts and ¼ teaspoon cinnamon. Sprinkle on top of doughnuts.
Notes
SNAPPY TIPS: Be sure your bananas are very ripe for best results. SNAPPY SUBSTITUTIONS: Instead of cinnamon, you could use a combination of other spices such as nutmeg, allspice, or apple pie spice mix. Instead of nuts you could use Wilton colored sugars or sprinkles.     My favorite doughnut would definitely have to be the one I had the other day. I’m a bit of a pumpkin addict, and so I saw this pumpkin spice glazed cake doughnut at Krispy Kreme the other day and had to have it. It was not only oohey gooey, but it had a rich pumpkiny taste to it. I’m so glad it’s fall because now I know where I can find these delicious doughnuts! :)

    When I was a kid @ our lake cottage I would get a chocolate covered donut with white cream in the circle and a cherry on top. I found one like that in the city I live in but it doesn’t have the cherry on top.

    Well, my favorite doughnut is really just that basic twist with glaze that you can get at any bakery. If I’m actually eating in the morning, I can’t eat something with too much sugar (like a filled one), but the twist just hits the spot!

    I’ve made homemade cranberry doughnuts that were good, but they were fried and just too much work and grease to make often. I have a few recipes for baked doughnuts pinned but haven’t gotten around to making them yet. The ones you made sound delicious (and so cute with that pan too)!

    My fave donut was a maple bacon donut at Buskens Bakery! Yes it had a slice of bacon on it! I loved the mix of sweet and salty. But unfortunately they did away with that flavor. Always happens to me!

    I like the chocolate dip dounut from Tim Hortons. Light and not so sweet. I haven’t every made donuts before but my grandmother would tell a story that when she started making donuts when my dad and uncles were kids. One by one they showed up in the kitchen and start taking over and before long she was sitting at the table with her coffee. She always had style!!

    Back in the day, my fav donut was Krispy Creme filled with chocolate on top. Now I prefer a sugar free, low fat, whole grain cake type donut with lots of good nutrition packed in….fruits, nuts, flax type stuff. Love your recipe!

    When I lived in NJ I used to be able to get a doughnut called Glazed Chocolate Sour Cream. It was so darn delicious that it often became my “reward” for getting thru a difficult task. I so wish I had a clue about how to make it at home!

    My favorite doughnuts when I was a little girl were made by my aunt. She would save a little of her dinner roll dough and the next morning she would shop the left over dough into a doughnut shape, deep fry it then sprinkle powdered sugar or drizzle honey on them. YUM!
