Another quick dinner recipe! This Blackend Chicken Alfredo with Homemade Alfredo Sauce is a family-friendly quick and easy dinner. If you don’t have chicken or veggies, no problem. You can use any meats and/or veggies you have around.
You should be able to find the Blackened seasoning in your grocery store with the other spices. Taste can vary by brand so you might need to adjust. Zatarain is a popular option, but a lot of others on Amazon as well HERE.
What is Blackened Seasoning
Blackened seasoning usually consists of a wide range of spices including paprika, garlic powder, onion powder, thyme, black pepper, cayenne pepper, basil, and oregano. It’s typically less spicy than Cajun seasoning and generally used on fish and other types of meat. You could substitute Cajun or Creole seasoning if in a pinch.
So like I said you really could use any protein or vegetables you want in this. Chicken, fish, shrimp, and even sausage would be great!
Blackened Chicken Alfredo Ingredients
- Pasta
- Onion
- Bell pepper
- Chicken, boneless skinless breasts
- Butter
- Garlic
- Heavy Cream
- Parmesan cheese, good quality finely grated
- Blackened seasoning store-bought or homemade Blackened Seasoning
How to Make Blackened Chicken Alfredo
- MAKE PASTA. Bring a large pot of water to boil and cook pasta according to box directions for al dente.
- COOK CHICKEN & VEGGIES. Meanwhile, cook onion, pepper, and chicken in a large nonstick skillet (or skillet sprayed with nonstick spray or a little olive oil) over medium heat for about 3-5 minutes or until vegetables are soft and chicken is browned and cooked through. Set aside.
- MAKE ALFREDO SAUCE. Place a large pot over medium heat. Melt butter, then stir in minced garlic cloves. Cook about 1 minute or until garlic is soft and fragrant, stirring constantly.
- Slowly add the heavy cream to the saucepan, whisk until cream comes to a boil. Reduce heat and simmer about 3-5 minutes or until it starts to thicken.
- COMBINE. Stir in Parmesan cheese and 2 teaspoons Blackened seasoning until smooth and thick. Add more Blackened seasoning as desired. Stir in onions, peppers, chicken, and drained cooked pasta.

Serving Suggestions
- I’d recommend topping the pasta with a little fresh chopped parsley and/or freshly grated parmesan cheese before serving.
- For best results, serve this pasta right away. Alfredo sauce generally tastes better when it’s fresh and not reheated.

Quick Tips for Best Results
- As I mentioned above I would recommend serving this pasta immediately. You can reheat leftovers, but they generally aren’t quite as good.
- Use any kind of pasta you’d like, but adjust the pasta cooking time as needed.
- Be sure the chicken, onions, and peppers are thoroughly cooked before mixing with the pasta.
- Cajun seasoning can vary quite a bit. Some are spicier than others as well so you may need to adjust the amount to your personal taste.
- If you like a lot of pasta and/or sauce, you might want to double either or both in the recipe. Some people may find the serving size a bit on the small side. Likewise, if you prefer A LOT of sauce, you may want to double the sauce recipe. Personal preference.

Alfredo sauce generally doesn’t reheat well, so I would suggest not making ahead but if you need to store leftovers, cover well, and refrigerate.
Can I freeze the Blackened Chicken Alfredo?
Alfredo sauce doesn’t usually defrost or reheat well so I would not recommend freezing it.
How long will the pasta last?
If covered well and stored in the fridge, leftovers should last at least a few days.
Substitutions?
Instead of chicken, you could use your favorite protein such as shrimp, crab, sausage, bacon, or even crawfish. Instead of peppers and onions, you could use your favorite vegetables or whatever you have around. You may need to adjust the cooking time if you change or add more meat and/or vegetables. Instead of Blackened seasoning, you could use Cajun or Creole but may need to adjust the amount to your personal liking. You can use any kind of pasta you’d like such as fettuccine, bowtie, or any other type.
Can I use low-fat ingredients?
You can use low-fat meat, but I would not recommend using low-fat ingredients such as light creams or cheeses in the sauce. Lower fat dairy may not result in a thick creamy Alfredo sauce.
What else can I add to this recipe?
You can add additional meats (such as shrimp, sausage, crab, bacon, and/or crawfish) and additional vegetables (broccoli, mushrooms, or even spinach).
What should I serve the pasta with?
