Oh boy, I’m so in love with this Slow Cooker Mexican Macaroni and Cheese and I know you’re going to love it too! It’s a fast and easy slow cooker recipe that is perfect for a busy weeknight that the whole family will enjoy!
You probably know by now, I LOVE cheese. You may also know that I LOVE my slow cooker. I was really excited to come up with a family-friendly recipe. And you can’t beat mac and cheese right? This list of ways how to make mac and cheese better always has me thinking of new combos.
For this Mexican Mac & Cheese recipe, I decided to use a Mexican Taco Cheese Blend that contains several varieties of cheese and taco seasoning. Since the cheese also has taco seasoning, that’s one less ingredient to remember to buy at the store!
This Slow Cooker Mexican Macaroni and Cheese is the perfect mac and cheese recipe for a busy night. My whole family enjoyed it even my kids. Did I mention there’s only 6 ingredients? Most of the ingredients you probably already have around the house. Now that my kids are back in school it’s a great weeknight meal that I can prep in just a few minutes.
My kids loved adding their own favorite toppings such as guacamole, tortilla chips, sour cream, chopped onion, and salsa. You can certainly adjust the ingredients and toppings based on your family’s likes and dislikes as well as diet and allergy concerns. I would add more veggies next time such as onions and peppers with all the other ingredients in your crock-pot, but not sure my kids would agree. :) I hope you enjoy it!

Slow Cooker Mexican Macaroni and Cheese Recipe
Ingredients
- 12 ounces evaporated milk (1 can)
- 1 cup milk
- 1/2 cup salsa
- 3 cups Taco Cheese Blend shredded cheese (or Mexican cheese blend)
- 1 pound precooked crumbled beef
- 8 ounces small uncooked pasta (such as Pipettes)
- Toppings (optional): sour cream, salsa, chopped onion, tortilla chips, cilantro, guacamole
Instructions
- Mix together evaporated milk, milk, and salsa in the bottom of a slow cooker. Mix in cheese, precooked beef, and pasta making sure the pasta is covered. Cover, and set on low for 1 hour.
- After 1 hour, uncover, stir quickly. Recover and cook an additional 30-45 minutes or until pasta is cooked through.
- Serve with favorite toppings.

Hi! Looks delish. Do you think subbing in a can or two of black beans would work. If so, reco’ed amounts? With juice or strained? Looking for a meat free alternative.

Hi Kim! I’m assuming you mean instead of the ground meat? I have not tried it but I don’t see why it wouldn’t. I think I’d go with 2 cans of strained beans.
