Crunchy Mexican Tortilla Chicken & Giveaway

I hope you enjoyed my recipe last week for Carribbean Oven-Fried Chicken!  If you made it and enjoyed it, let me know!  I have another chicken recipe for you today, Crunchy Mexican Tortilla Chicken.  If you have picky eaters in your house, I bet they’ll love this chicken!  This chicken dinner is also just as easy, delicious, moist, and crispy as the Carribbean Oven-Fried Chicken!  Also, courtesy of Hellmann’s I’m hosting a Giveaway with approximately $500 worth of prizes so be sure to read on to find out how to enter!

Today’s recipe is perfect for picky-eaters and based on Hellmann’s recipe for Crunchy Tortilla Chicken!  Hopefully, you don’t have any picky-eaters in your house, but if you do, I’m guessing they like tacos!  I love taking tastes my family loves such as tacos, and turning that into new ideas and recipes.  Do you have any tips for picky-eaters?  Even if you don’t like mayonnaise, you will be amazed how tasty, moist, and crispy it makes your chicken!  The chicken does not taste like mayonnaise at all.  No one would ever guess it’s an ingredient!  My picky-eater (aka my husband) was shocked when I told him this recipe, as well as my Carribbean Oven-Fried Chicken recipe, contained mayonnaise!

I didn’t make a lot of changes to Hellmann’s Crunchy Tortilla Chicken recipe.  The recipe calls for boneless skinless chicken breasts which I used, but you could use any type of chicken such as chicken parts, chicken thighs, or whatever your family likes.  You’ll just have to adjust the baking time if you use something else.  To start, I mixed together my mayonnaise (I used Light, but any variety will probably work), zest and juice from 1 lime, minced garlic, cilantro, and taco seasoning in a bowl until well combined.  You can use prepackaged taco seasoning or a homemade version.

Then I gently mixed the chicken breasts in the bowl to lightly coat.  I let the chicken sit for a few minutes in the sauce while I was getting the rest of my dinner ready.

I actually doubled the recipe so that I would have leftover chicken for later in the week.  I coated the chicken lightly in crushed tortilla chips.  You can use any kind of tortilla chips such as regular or baked, whole wheat or corn, homemade or store-bought, or whatever you’d like.  Just make sure the chips are crispy and can easily be crushed to crumbs.  To finely crush the tortilla chips, I places about 6 cups of tortilla chips in my food processor.  If you don’t have a food processor you can crush them with your hands or place the chips in a resealable bag and crush with a rolling pin.

Bake the chicken until golden brown.  I baked the chicken on top of a metal cooling rack that was on a large baking sheet. That way air can get under the chicken and make the bottom crispy too!  To go with my chicken, I made some steamed green beans and topped the beans with a little leftover fresh lime juice, zest, and cilantro.  I also cut a few potatoes up into small cubes (the smaller you cut them, the faster they cook!) and tossed them with a little olive oil and taco seasoning right in a large baking sheet and baked the potatoes in the oven at the same time as the chicken.

The chicken came out very crispy and moist!  It was delicious!  I topped my chicken with a little fresh salsa and more fresh cilantro.  Other toppings such as a little shredded cheese, sour cream, guacamole, chopped onions, or your favorite taco toppings would also work great!

Recipe based on Crunchy Tortilla Chicken recipe by Hellmann’s.
Ingredients
  • ½ cup Hellmann’s Light Mayonnaise (or any of their varieties)
  • 1 lime juiced & zested
  • 2 cloves garlic, minced
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 teaspoon taco seasoning
  • 4 boneless skinless chicken breasts (about 1 to 1¼ pound)
  • 1 cup finely crushed tortilla chips
  • Garnish (optional): salsa, guacamole, chopped onion, shredded cheese, sour cream, and/or your favorite taco toppings
Instructions
  1. Preheat oven to 425 degrees F. Place a metal cooling rack on top of a baking sheet and coat rack very lightly with nonstick spray (or line a baking sheet with parchment paper or nonstick aluminum foil).
  2. In a large mixing bowl, mix together mayonnaise, lime juice and zest, garlic, cilantro, and taco seasoning. Add chicken and mix to coat.
  3. Place tortilla chips in shallow bowl. Lightly coat chicken in tortilla chips then place chicken on prepared pan. Bake chicken for about 20-25 minutes at 425 degrees F or until golden brown and crispy.
  4. Garnish chicken as desired with favorite taco toppings.
Notes
SNAPPY TIPS: I suggest baking the chicken on the cooking rack if you can to keep the bottom of the chicken crispy. To quickly crush the tortilla chips, you can place about 6 cups of chips in a food processor and process until finely chopped. SNAPPY SUBSTITUTIONS: Use any variety of Hellmann’s mayonnaise.     SNAPPY GOURMET HELLMANN’S GIVEAWAY: I am the picky eater and “chef” of my household. I am a fitness instructor and competitive runner, so staying healthy is really important to me. I became passionate about cooking healthy foods, because it’s what fuels my workouts. I understand how certain foods can really help vitality, while others can trigger disease. I use all fresh, unprocessed ingredients when cooking. Fresh herbs and citrus can really add lots of flavor, instead of using oils, creams, salt or bottled marinades that are loaded with preservatives. I also bake with oat flour, use apple sauce instead of oil, and agave nectar instead of sugar or artificial sweeteners, which are difficult to digest. Presentation can actually enhance the appeal and taste of the food. I drink a “green” smoothie everyday, which is super healthy. It looks gross! However, if I put it in my orange colored drinking glass, I can drink it much more easily. I also prepare my husbands meals with love, which is the best ingredient. I will sometimes use a cookie cutter in the shape of a heart when plating his meals. I also make our dinners fun. For example, I will make a “create your own taco station” with a buffet of toppings. I also pack his lunch everyday for work, and I often get emails of appreciation from him.     My picky eater is also my Hubby, I make a lot of meals where I can kick up the spice or add my own protein in at the last minute. Mexican is also always a hit. It’s been a lot of trial and error but I love it!

    I introduce foods a little at a time and never force anyone to eat it. It’s a good idea to incorporate healthy foods into foods that are already liked , for instance, adding a little zucchini in with the spaghetti.. etc..

    I have one picky eater and I always commend her for trying it! It’s always a good idea to focus on the positives of what they will eat rather than on what they won’t eat. Eating is supposed to be a joyful experience, so respecting her differences in taste, is teaching her by example to respect others differences as well.

    Some of my nieces and nephews are picky eaters. I always ask them to take a courtesy bite of new things to see if they like it. Also putting cheese on vegetables to to help as well.

    I have a hard time with picky eaters. I try to offer a variety of things, and you just have to TRY it. You don’t have to like it or eat it all, but you have to try everything

    As for picky eaters, I either don’t give an option, just because people need to live a little, but normally I’m upfront about what I cooked. I try to compare whatever the “odd” part of the recipe might be to something more familiar. I like making converts of people. It’s sort of the same thing my mom did when we were growing up. We didn’t have to like something, as long as we gave it a try first.

    My husband is my picky eater. He hates onions. That makes cooking a big challenge. I will often grate a shallot to add to a recipe, so he doesn’t know it’s in there. I can hide small shallots in my pantry but big onions would give me away.

    I have no regard for picky eaters. Health and religious issues, I absolutely honor. Picky eaters? Texture? Color? Meh! If I’m feeling gracious, I’ll make sure there’s a side dish that’s deemed edible, but I see no reason whatsoever to cater to people who complain and make demands instead of politely eating what’s put in front of them. In real life, I’m not quite this harsh; in my mind, I’m even more rigid, though!

    LOL I AM the picky eater in my house. My fiancee pretty much handles me by agreeing to whatever I’m feeling like eating because he knows otherwise it will be a huge ordeal. He has become ok with eating the same thing for days until I’ve tired myself out on it lol. But he is picky when it comes to “burnt” meat… he hates (what he calls) “burnt” burgers or steak (which I just call charred) so whenever I make burgers I have to make sure not to let them get charred, though I like it that way :)

    I deal with little picky eaters by making my food look good or interesting! I find that having a variety of color and texture on a plate or in a lunch box helps encourage kids to try new things.

    My picky eater is my husband. He will humor me once or twice a week when I try to introduce something new into a familiar meal, such as vegetable or fruit or both. It is very challenging. Once I have a success, I really have to make note of it so I can fix it again at a later date.

    The main picky eater in my life is my husband.

    My main strategy is sneaky persistence.

    I LOVE an enchilada casserole recipe that I make, but he “didn’t like it.” I just kept making it, sometimes making him something else to eat. Then I’d heat up leftovers for myself when he was hungry. The aroma would fill the kitchen. Even my dog loves the casserole.

    Now, sometimes he even suggests I make it!

    Wow! I love to cook and try new things. My two younger daughters have always been picky eaters. It has gotten easier now that they are teens. Then and now, when I prepare a dish they are required to give it an honest taste. If they really don’t like it, they can pass. If they say it’s okay then they can eat it. Same goes if they love it of course.

    My picky eaters have to rotate the same easy to make options every day. I require them to eat all the food groups, but if they don’t want variety, that’s their problem.

    my trick for picky eaters is to include something they like – spaghetti sauce, cheese, or fruit can make the “boring” stuff like vegetables more fun

    I try to make the things they don’t like look pretty, make some carrot sticks with raisin “ants” on them, or decorate a peach half up like a spider…..it sure is more fun to eat when your eating fun!

    My wife and I use to just get our children to a least try the food. You don’t have to eat any more it you don’t like it, but you must at least try it. It always helps to have good desert later.

    I’m actually the picky eater in the house, but I’ll admit, I like my sauces. I like to go to the farmer’s market, find fresh fruit and veggies, and then spice them up with my favorite sauces or new recipes I find online. (Thank goodness for Pinterest!)

    We lucked out a bit when it comes to our litte girl, Kaia, and the food she likes to eat. From the time she was a baby, about 7 months, is when I began making food for her. She basically ate what we did, balanced meals, just in a different form until she got all her teeth.
    Make food fun, keep it appealing to all senses including visually and let them help in the kitchen. Kids are much more willing to eat something they’ve felt proud about preparing!

    Picky eaters? What are those? Thank God I have none. We hvae 4 kids & they will pretty much eat anything you put in front of them. There might be a couple things here & there they don’t like (my 16 year old doesn’t like mushrooms, but if I chop them up tiny she never knows the difference)… I either omit the ingredient in their dish or I “hide it”.

    To be honest, I am the picky eater in my family!!! I am not a huge vegetable fan, but I add frozen veggies into casseroles and mac and cheese. My husband will cook squash and freeze it in ice cube trays and I’ll add a couple of cubes to mac and cheese. I also sometimes add beans into mac and cheese.

    I love your question….actually, the picky eater at my house is my hubby, not the kids. :) I always try to change things up and make dinner time fun and always include 1 or 2 things that he loves so he get to try new stuffs all the time (with old favorites as well).     Picky eaters drive me crazy! My kids are picky eaters. Seems like no matter what we make, one of them will give us a hard time. Our rules are simple with the kids, if you don’t at least try a few mouthfuls, than no treats. But, having picky eaters really is a pain.

    Picky eaters? We take turns cooking and planning meals, we find recipes that work for all of us..it’s a trade off and we test/try new recipes all the time. The one rule? Everyone has to try it.

    when dealing with my picky eaters, i usually just give in. but my daughter grew out of being extremely picky and will now eat many different kinds of food. i am hoping my son will eventually do the same. maybe not pressuring her too much helped her try new foods on her own timeline.

    We do a lot of blindfold taste tests to make our kids try things without knowing what they are and already forming an opinion on whether they like it or not. Most things they don’t like, we blend finely and mix it with PB because they love that. :)

    How do you feed the picky eaters in your life. What are your tricks, favorite recipes, or how do you handle them at dinner time?-Answere: I find what foods they do like and try to search for recipes that I know work for them. For my picky eater, I know she loves chicken, so I search for recipes that have boneless chicken in them. I print them out, ask if she would like to try this recipe, than tell her we can make it together. It’s the perfect way to teach her how to cook as well as spend time together. With her being a young adult at 18 years old,, and me being legally blind, we work together to create meals we both enjoy makiing as well as eating.

    I cater to the picky eaters in my family. When I was growing up, my sister and I had to eat every gross thing on our plate, and I grew up unwilling to try anything new. When I go to a restaurant, it’s easy for me to order because there’s only one or 2 things I like. I won’t do the same thing to my kids. I respect their likes and dislikes, and work around them, even if it means I feel like a short-order cook sometimes. But…. I WILL admit that in the summertime, I shred the zucchini from the garden and add it to EVERYTHING it won’t be noticeable in – chili, spaghetti sauce, pizza sauce, sloppy joes, etc :-)

    I’m fortunate in that the picky eater in my family has learned how to deal with his pickiness (is that a word?) so while I respect his needs in some things, I ignore them in others.

    So far no picky eaters in my house but I’m sure once my son is old enough to feed himself we will have that problem. I just try to spice up basic foods and make them more interesting. My husband is not a fan of Cauliflower but I’ve found some amazing recipes on Pinterest that he actually goes back for seconds!

    Thank God my 3 children are not picky eaters but my husband somewhat is! So I search favorite recipes on line and from watching TV and I always prepare a few side dishes that he loves. Also I think presentation of the dishes at dinner time is important too.

    I only have one picky eater….my youngest son. If he chooses not to eat what the family is eating for dinner, he can make his own peanut butter and jelly sandwich – but he still needs to eat some veggies (which he doesn’t mind)

    My son has always been a picky eater but we encourage him to try new things. He has to at least take a bite of something and then if he doesn’t like it, we’ll go from there.

    I am actually the “picky” eater in my house because I am vegan. But I eat a variety of foods, and I always try to eat balanced meals. I don’t force anyone else in the house to be vegan, so everyone feels like they can eat what they want.

    My first born was very picky so we devised a trick to get her to eat.She had a few favorite characters and we told her each character had a certain color(blues clues was blue,bear in the bi blue house was orange,ect.).We then picked foods in those colors and he would eat no matter what we put in front of her.Thanks!

    my nephew is extremely picky. we have actually resorted to “oh, remember last time we had this you LOVED it!” most of the time it works. we feel bad but hey… ;)

    We keep it simple for the picky eaters around here. Nobody is “forced” to eat anything they don’t think they will like because we can easily substitute green beans for carrots and not have any drama at the table. I think if the kids can see the adults enjoying their meal then they are more apt not to question it.

    I tell my daughter that this recipe came from Tinkerbell and it will make her fly with Peter Pan when she’s sleeping. Yes, I know. I’m a filthy liar! But, it gets her to at least try it. :)

    I have found that the best way to get kids to try new foods is to get them involved in deciding what to have, shopping for ingredients and helping with preparation.

    I try to make meals that include what the “picky eater” likes. If it’s something new I have them at least try it. I they don’t like it I don’t believe in forcing them to eat it. I certainly wouldn’t want to be forced to eat something I didn’t like. I think they eventually grow out of it. I know I did.

    It’s just me and the fiance and I would have to say he is picky. Our work lives are on 2 different shifts so when I do make food for the both of us it is typically something that he will eat (I’m not the picky one at all, LOL).

    My youngest daughter was a picky eater. I decided early on that her pickiness would not be the driving force behind our meals so she was served what everyone else was for dinner. She did not have to clean her plate but was expected to take ONE bite of something she found offensive to her sophisticated (?) palate.

    She knew the drill and sometimes…she was hungry enough she sort of forgot she was picky and just ate. Fast forward many years and she has few things she won’t eat today. Among the holdouts are green peppers and I’m OK with that. I hate them too. :)

    I encourage picky eaters to try new things. The other day I was babysitting my niece and she refused to eat something and I encouraged her to try it and she ended up asking for a serving of it.
