This cake is soft, moist, and simple to make, with no complicated techniques required. If you’ve ever wanted a “wow” cake without extra stress, this is the one.

If you bake this Zebra Cake, don’t skip slicing it in front of people. The stripes are half the fun.

What I Love About This Recipe

  • I love the visual impact of this cake. The zebra stripes look dramatic and fun, yet they’re created with a surprisingly simple spooning technique. It feels fancy without requiring special tools or skills. That makes it perfect for home bakers.
  • The flavor combination is a classic for a reason. Chocolate and vanilla balance each other beautifully, so every bite has just the right mix of richness and sweetness. It’s familiar, comforting, and crowd-pleasing.
  • This cake stays moist thanks to the oil and milk in the batter. Even after frosting and storing, the crumb remains soft and tender. It slices cleanly and holds together well, which makes serving easy.
  • The vanilla frosting is smooth and lightly sweet, letting the cake shine. It doesn’t overpower the flavors or distract from the striped interior. Simple frosting done right is always a win.

How to Make Zebra Cake

Step One: Prepare the Oven and Pan
Preheat the oven to 350°F. Grease and lightly flour a 9-inch round cake pan.

Step Two: Mix the Dry Ingredients
In a medium bowl, stir together the flour, baking powder, and salt until combined. Set aside.

Step Three: Mix the Wet Ingredients
In a large bowl, beat the sugar and eggs together on medium speed until well blended, about 2 minutes. Add the oil, milk, and vanilla, and beat until combined.

Step Four: Make the Batter
Add the dry ingredients to the wet ingredients and beat just until blended.

Step Five: Make the Chocolate Batter
Spoon half of the batter into a separate bowl. Whisk the cocoa powder into one bowl until fully blended.

Step Six: Create the Zebra Pattern
Spoon about 3 tablespoons of vanilla batter into the center of the pan. Spoon 3 tablespoons of chocolate batter directly on top. Continue alternating batters, always spooning into the center, until all batter is used.

Step Seven: Bake the Cake
Bake for 30 to 45 minutes, or until a toothpick inserted into the center comes out clean. Cool slightly, then remove from the pan and cool completely on a wire rack.

Step Eight: Make the Frosting
In a medium bowl, beat the butter and powdered sugar until smooth. Beat in the vanilla and salt. Add milk a little at a time until the frosting is smooth and spreadable. Frost the cooled cake.

Here are some suggestions, but I can’t guarantee results. Be sure as always to check particular brands and ingredients if you’re following a specific diet or have diet restrictions or allergies.

Vegan – Use plant-based milk, butter, and egg substitutes.

Vegetarian – It’s vegetarian. Be sure to check individual brands/products just to be sure though.

Low-Carb – You can try a sugar substitute.

Gluten-Free -A 1:1 gluten-free flour blend may work, but results can vary.

Instructions

  • Preheat the oven to 350˚F. Grease and flour a 9-inch round cake pan.
  • In a medium bowl, stir together the flour, baking powder, and ¼ teaspoon salt. Set aside.
  • In a large bowl, beat together the granulated sugar and eggs with an electric mixer on medium until well blended, about 2 minutes. Add the oil, 1 cup milk, and 1 teaspoon vanilla, beating until well blended.
  • Add the flour mixture to the egg mixture, beating on medium until just blended.
  • Spoon half of the batter into a separate bowl. Whisk the cocoa powder into one of the bowls, stirring to blend.
  • To make stripes, alternate adding the two batters to the pan. Spoon about 3 tablespoons of vanilla batter into the center of the pan (a cookie scoop works great). Then spoon about 3 tablespoons of chocolate batter in the middle of pan on top of the vanilla batter. Repeat until all batter is in the pan. The cake batter will spread to the edge of the pan as you add more.
  • Bake for 30 to 45 minutes, or until a toothpick inserted into the middle comes out clean. Let the cake cool slightly in the pan, then remove from the pan and place on a wire rack to finish cooling.
  • Make the frosting. In a medium bowl, beat together the butter and powdered sugar with an electric mixer on medium speed. Beat in ½ teaspoon vanilla and ⅛ teaspoon salt. Add a little milk if necessary to thin the frosting. Spread the frosting over the cooled cake.

Notes

SNAPPY TIPS:

  • A trigger cookie scoop works great for adding the batter to the pan.
SNAPPY SUBSTITUTIONS:
  • Instead of adding cocoa powder to one of the batters, dye each bowl of batter a different color for a fun new look.
