When I heard about the Hellmann’s “Chicken Change-Up” campaign and asked if I wanted to participate and try a few recipes, I knew I had to give it a try. Hellmann’s has a wide variety of products and chances are we always have at least one of their products in our house. Today’s recipe, Caribbean Oven-Fried Chicken is a budget friendly recipe and not to mention, quick, easy, and delicious! Do you have any tips on cooking dinner on a budget???
Hellmann’s has a wide assortment of recipes in a variety of categories including recipes that are “Time Saving” or “Budget Friendly”, some that are for your “Picky-Eaters” and some recipes that are a “Twist on a Classic”. They have a wide variety of products for every diet or budget including real mayonnaise, light mayonnaise, mayonnaise dressing with olive oil, canola cholesterol free mayonnaise, lowfat mayonnaise dressing, etc. Today’s recipe, Caribbean Oven-Fried Chicken is based on Hellmann’s recipe for Oven-Fried Herb Chicken. These are budget friendly dishes although you’d never know it because it was delicious! It was also quick and easy to make. The original Oven-Fried Chicken recipe according to Hellmann’s costs just $0.88/serving for the chicken. My recipe costs about $2.50/serving for the chicken, salsa, and sides which is still very affordable! You would never know this was a “budget” meal. The first thing my husband said when he tasted the chicken was “What did you do to this chicken, it’s very moist and crispy?”. Everyone cleared their plates, so I’m thinking that was a VERY good sign! I have to agree and that it was some of the most moist and crispy chicken I’ve ever had and how wonderful that it was baked and not fried!
The original recipe calls for a variety of chicken parts, but I happened to have some boneless skinless chicken breasts in the freezer that I had bought when chicken was on sale for $2.99/lb. Chicken freezes great, and when I see it on sale I like to stock up a bit and keep it in the freezer. If you’re watching your budget stock-up a bit when you see a good sale, BUT make sure you can use what you’re stocking up on before it goes bad or expires. Since these particular chicken breasts were rather large, I cut them in half and pounded them slightly so that they would bake evenly. Since I was cutting up the chicken, I decided to cut up a lot for other recipes later in the week. I put the remaining chicken in a resealable bag and stored in the fridge for a couple of days. Saves some time and only have to clean the cutting board once!
I mixed the mayonnaise together with some lime juice and zest then gently stirred the chicken around in the bowl to coat. You can also put the mayonnaise in a resealable bag and toss the chicken in the bag to coat. The original recipe calls for Hellmann’s Mayonnaise Dressing with Extra Virgin Olive Oil but I substituted their Light variety since that’s what I had on hand. I bet any variety of Hellmann’s mayonnaise would work great. You could really add a variety of things to the mayonnaise to create a dressing to coat the chicken in. It’s like a blank canvas! Do you have any citrus fruit, herbs/spices, condiments, etc. around that you want to use up? Make your own dressing!
I then dipped the chicken in bread crumbs that I had seasoned with some Caribbean Jerk seasoning. The original recipe uses garlic salt, oregano (parsley or rosemary) and black pepper, but I chose to use Caribbean seasoning to use up some things I had around the house. I had some mangos that were about to go bad so went with a Caribbean “theme”. Another one of my budget tips is to use what you have around the house especially produce, dairy products, etc. that may go bad soon. No need to buy more food if you have a lot of produce or other items in your house that are going to go bad soon. Having to throw out food is a huge waste of money.
I baked the chicken on top of a metal cooling rack that was on a large baking sheet. That way air can get under the chicken and make the bottom crispy too! While the chicken was baking I made a quick mango salsa to use up my mangos and other produce I had around the house. You could skip the salsa, or use any fruit you have in the house or what’s on sale at the store.
As I mentioned, the first thing my family noticed about this chicken was how moist and crispy the mayonnaise made the chicken. Not sure I would have believed it if I hadn’t tried it myself! The leftover chicken also heated up quite well in the oven later in the week. It didn’t dry out like most leftover chicken. To go with the chicken I also made some brown rice and black beans. The whole meal (chicken, salsa, rice, and beans) cost about $10 for all 4 servings! That’s $2.50/serving! Not a bad deal! The total will vary depending on what brands you use, your store sales, and any substitutions you make. As I mentioned above, the original chicken recipe (chicken only) according to Hellmann’s costs about $0.88/serving. Another great deal! |Caribbean Oven-Fried Chicken||
- 1 cup bread crumbs
- 1 teaspoon Caribbean (Jerk) seasoning
- ¼ cup Hellmann’s Light Mayonnaise (or any of their varieties)
- 1 lime, juiced & zested
- 1 pound boneless skinless chicken breasts
- 1 large (or 2 small) mangos, finely chopped
- ¼ cup red onion, finely chopped
- ¼ cup cilantro, chopped
- 1 teaspoon jalapeno, minced
- 1 lime, juiced & zested
- 1 teaspoon olive oil
- Prepared rice (brown or white) and black beans
- Preheat oven to 425 degrees F. Place a metal cooling rack on top of a baking sheet and coat rack very lightly with nonstick spray (or line a baking sheet with parchment paper or nonstick aluminum foil).
- Combine bread crumbs and seasoning in a shallow dish; set aside.
- Mix together mayonnaise and juice/zest from one lime in a resealable bag or large bowl. Add chicken and mix to coat.
- Lightly coat chicken in bread crumbs then place chicken on prepared pan. Bake chicken for about 20-25 minutes at 425 degrees F or until golden brown and crispy.
- Meanwhile, prepare salsa by combining all salsa ingredients in small bowl and mix to combine. Serve salsa, rice, and/or beans with chicken as desired.
