Vanilla Caramel Cream Cocktail, an easy drink recipe with vanilla, Bailey’s Irish cream, and caramel.
My recent trip to Atlanta is the trip that just keeps giving! Here’s yet another recipe inspired by my trip to the BlogHer Food Conference and more inspired recipes on the way! Beanilla was a sponsor of one of the parties I attended in Atlanta and they gave everyone several fresh vanilla beans to take home. When my kids got one whiff of these vanilla beans when I got home I had to fight them to get the beans back. They wanted to eat them as-is since they smelled so good! Crazy kids!
But happy to report, I got the beans back and have a few more ideas on how to use the rest of them. But to start off with I really wanted to make a cocktail using the beans. Ok, I’ll admit, I was looking for any reason I could one day to make a cocktail!
I love how you can see the vanilla specks in this drink and the vanilla beans go great with the caramel flavor! You can easily cut this recipe in half for 1 drink if you don’t want to share! :)
I tried drizzling caramel in the glass before I poured the drink in and I think my caramel was too thin and all went to the bottom of the glass! But it still tasted great! Cheers!!
Vanilla Caramel Cream Cocktail
Ingredients
- 1 vanilla bean
- 1/2 cup Bailey’s caramel Irish Cream
- 1/4 cup milk or cream
- 2 tablespoons caramel
- 6-8 ice cubes
- Garnish (optional): more caramel to drizzle in glass, whipped cream, and vanilla bean(s)
Instructions
- Split vanilla bean, scrape out seeds, and place seeds in blender. Add Bailey’s, milk/cream, caramel, and ice cubes to blender. Process until smooth. Pour into 2 glasses and garnish as desired.

How did I miss out on the Beanilla???? Oh yeah, they were at that party that no one told me about. LOL! I did use the Starbuck’s VIA in cookies and it was great.

Yay! The cocktail recipe and it looks so yummy! Unfortunately I have no Baileys or vanilla beans right now, so I’ll have to wait to try it. New drink for next time by bff comes over, she can’t have rum and most of my faves have rum, so a good one to try that doesn’t.
