Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper.
Cut potato into thin slices, then each slice into long thin strips. Place potato strips into a large mixing bowl and toss with olive oil, salt, and pepper.
Place potato strips in a single layer on parchment paper lined baking sheet leaving a little room between each strip.
Bake potatoes in bottom of the oven at 425 degrees F for about 20-30 minutes, flipping over halfway through baking.
Drizzle fries with truffle oil and top with Parmesan cheese and parsley. Serve immediately.
