Place pork in large nonstick skillet over medium-high heat and brown meat while crumbling until cooked through, about 5-7 minutes. Drain excess grease, then place back on heat.
Meanwhile, place all sauce ingredients in blender (or food processor) and blend until smooth. Pour over pork, stir to combine, bring to a simmer, and cook about 5-10 minutes.
While pork is simmering, place coleslaw mix, red onion, 1 chopped mango, and cilantro in large mixing bowl and mix to combine. Drizzle olive oil, honey, and lime juice on top and stir to combine.
Spoon filling into tortillas and top with coleslaw and cilantro to serve.
