Peach Crisp Parfait, an easy breakfast or snack recipe packed with protein thanks to Friendship Dairies cottage cheese! You can even make it ahead for a quick breakfast throughout the week. This parfait will fill you up and give you lots of energy for the day.
This Peach Crisp Parfait is super easy to make. You can make your own creation with Friendship Dairies cottage cheese, thanks to the Friendship Dairies Superfood Generator. You pick the cottage cheese variety then add 3 superfood mix-ins. You’ll get a summary with all the protein and health benefits.
For my superfood mix-ins I added peaches (Vitamin C), cinnamon (Manganese), and oats (fiber). Then added a few more including coconut sugar (low glycemic index) and walnuts (omega 3 fatty acids). I took all my superfood mix-in ideas and made it into a parfait for an easy breakfast or snack.

So for my recipe, I started with the 1% milkfat whipped cottage cheese. I love the creamier texture and that a half cup has a whopping 15 grams of protein. Friendship Dairies cottage cheese is The Original Superfood, high in protein, and a good source of long-lasting energy. I don’t know about you, but I need all the energy I can get these days!
Then I took some of my mix-in choices and made a crispy layer for my parfait with oats, walnuts, cinnamon, coconut sugar, and a little butter. I baked it in the oven until golden brown. You can easily make this oat mixture ahead of time and store in a little container or sealable bag in the cupboard.
To add a little spice to my peaches, I added a little cinnamon, coconut sugar, and butter and baked in the oven until the peaches were soft. You could easily make the peaches ahead and store in a covered container in the fridge.
Lastly, I added a little more coconut sugar, cinnamon, and vanilla to the cottage cheese then layered it with the peaches and oat mixture. A healthier alternative to traditional peach crisp!

Peach Crisp Parfait
Ingredients
crisp layer
- ½ cup steel cut oats
- ½ cup chopped walnuts (or pecans)
- 1 teaspoon coconut sugar
- ½ teaspoon cinnamon
- 2 teaspoons unsalted butter cold & cubed
peach layer
- 4 peaches pits removed & chopped
- 1 teaspoon coconut sugar
- ½ teaspoon cinnamon
- 2 teaspoons butter
cottage cheese layer
- 2 cups Friendship Dairies Cottage Cheese
- 2 teaspoons vanilla extract
- 1 teaspoon coconut sugar
- ½ teaspoon cinnamon
Instructions
- Preheat oven to 350 degrees F. Mix together oats, walnuts, 1 teaspoon sugar, and ½ teaspoon cinnamon in small bowl. Cut in 2 teaspoons of butter until mixture is slightly clumpy. Spread on small baking sheet lined with aluminum foil. Bake at 350 degrees F for about 10-15 minutes or until browned and crispy. Set aside to cool.
- Meanwhile, place chopped peaches in a baking dish. Sprinkle 1 teaspoon sugar and ½ teaspoon of cinnamon on top. Top with butter. Bake at 350 degrees F for about 10-15 minutes or until peaches are soft and butter has melted. Stir to combine, then set aside to cool.
- In small mixing bowl, combine cottage cheese, vanilla extract, 1 teaspoon sugar, and ½ teaspoon cinnamon.
- Layer cheese filling, peaches, and crisp oat mixture in small glasses or mason jars.
