This week’s interview is Caroline Edwards from Chocolate & Carrots! Stop by her site and social media and check out some of her delicious recipes below! I’m dying for a piece of the chocolate chip cake!
Can you tell me a little bit about yourself?
I’m a wife and stay-at-home mom to a little dude named Liam. We also have a puppy named Leland who’s the big brother around the house. We live in Charleston, South Carolina where my high school sweetheart of a husband and I were born and raised. I love to exercise (specifically run) and if I could, I would bake all day long. I love modern and simple styles. I blame Design Milk for that. I speak ‘car’ and my evening pastime is spent on the couch watching the British car show, Top Gear….usually while I receive a foot massage. Oh, and I love chocolate. A lot.
Can you tell me a little bit about your blog?
I graduated from The College of Charleston in Mathematics and Computer Science. I married my husband while in my senior year of college and afterwards, followed him up to Columbia, South Carolina for his work. I was never able to find a job with my degree with the failing economy, so I started my blog. I focus on healthier dessert recipes, originally inspired by my Cooking Light magazines. I also throw in some awesome savory dishes that my family and I love to eat. I absolutely love what I do and that I’m now able to continue to do it while being a stay-at-home mom!
What do you like most about blogging? What do you NOT like about blogging?
I love sharing mouthwatering recipes and photography. Also, the community within the blogging community is amazing! Even though I’m stuck in my house all day long, I feel like I travel around the world everyday with my blogging friends and fans.
Alas, the downside of blogging is the business side of things for me. I don’t necessarily appreciate the paperwork, contracts or (sometimes annoying for everyone else) self-promotion. I’ve always struggled with comparing myself to others in my field. I try really hard not to look at those numbers and focus more on the recipes, photography and community that I love so much!
What would be one tip you would give to someone who was thinking about starting a blog?
Only do it because you love it. It has to be that thing that you do everyday if you were never paid to do it.
What are some of your favorite recipes you’ve created?
Where do you get ideas for your new recipes?”
Oh gosh, from all over! Some are inspired from fellow bloggers, cookbooks, television or just some random weird combination that I dream about!
Where do you see you and your blog 5 years from now?
Well, probably with more kiddies running around the house and continuing to do what I love everyday. It’s that something that I’ll never give up because it’s what I love to do. Shoot, in five years, I’d love to be helping contribute to my family financially with my blog. :D
