The holiday season is in full swing around here and I’ve been making Christmas cookies like a CRAZY person! I have a new favorite Christmas cookie recipe that I’ll be sharing with you later this week so be sure to get on my email list if you’re not already so you don’t miss this one. I think it’s the best Christmas cookie recipe ever. In the meantime, I thought I’d ask other food bloggers if they had a favorite cookie recipe. I got a lot of great responses and recipes so be sure to check out their blogs and recipes for some new favorites.
Last day of my 2011 holiday cookiepalooza! Today is the last cookie! Guess I cut it a little close since Christmas is tomorrow!! Well, if you’re baking is done, save some of these cookie recipes for next year or whip up some cookies for New Year’s! Cookie #8 today is for Peppermint Chocolate Sandwich Cookies. Just like the first seven cookies, these cookies are all made from the same dough with just the addition of a few different ingredients. I love chocolate and peppermint together, especially this time of year! This recipe is also a great way to use up some of those leftover candy canes you may have around or buy some candy canes on clearance today.

Although, you are certainly welcome to add some other flavors. I’ll admit I was a little skeptical about these cookies. In fact I actually wasn’t going to make them, but when I asked my Snappy Gourmet FACEBOOK friends if they liked butterscotch, I got a huge “YES” overall. To my surprise, I really ended up liking these cookies and think you will too! I have one more cookie to post which I’ll post tomorrow before concluding this year’s holiday cookiepalooza!
