If you’re looking for a fun appetizer for the upcoming holidays, look no further! These Mini Pea Soup Bread Bowls are perfect! This easy homemade pea soup recipe is ready in about 10 minutes thanks to Libby’s® Sweet Peas! This easy homemade pea soup is ready in about 10 minutes (crazy, right?), or maybe a little more or less depending on how good you are in the kitchen. If you’re unsure about pea soup, let me just tell you that my super-picky-eater-who-hates-all-vegetables (aka my daughter) asked for a second helping of this pea soup then hid the rest of the soup for her lunch the next day before anyone else could have any! What?!
So let’s make some soup! Start with a can of Libby’s® Sweet Peas. The recipe makes about 2 1/2 cups of soup, so if you want more, then double or triple the recipe and get a few more cans of Libby’s® Sweet Peas.
Drain and rinse the peas well. While they’re draining, put a medium saucepan over medium-high heat.
Add a little butter to the pan then some finely chopped onion and a minced garlic clove. Once the onions and garlic clove are slightly softened, add the peas and broth. I used chicken broth, but you could also use vegetable broth.
Mix in the celery salt, black pepper, and dried thyme. I really recommend the dried thyme. It really takes the soup to a whole new level! Add the cream (or half-and-half) and bring to a boil.
Reduce the heat to a simmer. If you don’t have an immersion blender I highly recommend getting one! I just got one a few years ago and now can’t live without it! Process the soup until smooth with an immersion blender.
If you don’t have an immersion blender, carefully process the soup in a blender, BUT please leave the top off a little bit if using a blender to let the steam escape otherwise you may have a bit of a soup explosion. You don’t want to be cleaning up pea soup all over your kitchen.
While your soup is cooking or cooling a bit, cut the tops off of your rolls and pull out the inside to form bowls. I used small dinner rolls, but you could really use any kind of bread or rolls. Bite-size little rolls would be the best for little appetizers!
Again, the recipe makes about 2/1 2 cups of soup so you’ll have to judge how many rolls you’ll need depending on the size of the rolls you pick.
I topped my Mini Pea Soup Bread Bowls with precooked crumbled bacon. The smokiness of the bacon worked so well with the pea soup. The soup is really creamy and has a bit of sweetness thanks to the peas. Yum!
Love that these little soup bowls are perfect for Thanksgiving and holiday meals! These Mini Pea Soup Bread Bowls are great as an appetizer, or soup, before or with the meal. Or if you’re like my daughter you will eat it all day long any day.
I had to get a picture of my vegetable hating daughter who asked for MORE! Seriously people, this child tolerates vegetables because I make her but she NEVER asks for more!
Hope you enjoy this easy homemade pea soup recipe!
