Caribbean Shrimp Stuffed Waffle Pops is a fun party appetizer recipe made right in your waffle maker with shrimp, waffle batter, and Caribbean seasoning.
Caribbean Shrimp Stuffed Waffle Pops and Mango Cilantro Dip recipe for you today! Caribbean seasoned shrimp are coated in a corn waffle batter that has jalapeños and onions then paired with a sweet mango cilantro dipping sauce. These “pops” are sweet and spicy and great as an appetizer or entrée!

It was an incredible experience to be part of “Waffle Wars” with one of my favorite original recipes, Crunchy Chicken Stuffed Waffle Pops! It was a fabulous experience, but I can’t say much about it until after the show airs. To celebrate “Waffle Week” I thought I’d come up with a new fun waffle recipe!

To get started on these Caribbean Shrimp Stuffed Waffle Pops make the waffle batter first. Mix all your dry ingredients together in a large bowl. The batter contains a mixture of both flour and corn meal for a slight corn flavor. I used Quaker yellow corn meal that is usally sold by the flour/sugar. Yum! I used McCormick’s Caribbean Jerk seasoning to give the batter a slight spicy and Caribbean flavor.
In another bowl, mix together your wet ingredients until well combined. I used Crisco canola oil or you can use vegetable oil.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Then stir in your jalapeños and onion. Make sure your jalapeños and onion are very finely chopped. You can omit the jalapeños and onions if you want or you can substitute bell peppers.
Let your waffle batter sit for a minute while you prepare the shrimp. You can buy precooked shrimp or cook the shrimp yourself. If you do cook the shrimp yourself, make sure the shrimp is cool before you continue. Make sure the shrimp has been deveined and shells have been removed. Sprinkle some Caribbean seasoning on the shrimp then place a skewer in each shrimp.
Make sure the skewer goes all the way through the shrimp to the top so that the shrimp doesn’t flop around when you dip it in the waffle batter. You want the shrimp nice and secure. I used jumbo shrimp but you really could use any size you want although I think the larger sizes are going to work a little better.
Brush a little oil or melted butter on your waffle maker and preheat. Dip the shrimp in the waffle batter. You may have to dip a few times to make sure the shrimp is completely covered or use a spoon to coat the shrimp on all sides if you’d prefer.
Place the shrimp on the hot waffle iron with the sticks sticking out of the waffle maker. You’ll have to cook the shrimp in batches. You don’t want to overcrowd the shrimp in the waffle maker and you want to work fast otherwise the waffle batter will start to drip off the top of the shrimp.
Cook for a few minutes or until golden brown. If one side doesn’t look quite done, you can flip them over (they should fit in the grooves, you just may have to move it around a little until it fits in) and cook a little longer.
As you’re cooking your pops, you can keep the batches warm in the oven if you’d like. You can also prepare your dipping sauce. For the sauce, combine everything in a food processor and process until smooth. If you do not have a food processor you can try a blender (you may need to add a little more liquid) or just chop up all the ingredients and mix together for a chunkier sauce. I used Chobani plain Greek yogurt. I love the thick creaminess of Greek yogurt!
These Caribbean Shrimp Stuffed Waffle Pops and Mango Cilantro are great as an appetizer or entrée! You can make them ahead of time and reheat in the oven.
I LOVED these pops!!! My family couldn’t get enough!! They may be a little spicy for some people so adjust the seasoning as needed.

Caribbean Shrimp Stuffed Waffles & Mango Cilantro Dip
Ingredients
Waffles:
- 3/4 cup yellow corn meal
- 3/4 cup all-purpose flour
- 1 tablespoon Caribbean seasoning divided
- 2 teaspoons granulated sugar
- 1 1/2 teaspoons baking powder
- 3/4 cup milk (skim is fine)
- 1 large egg
- 1 tablespoon vegetable or canola oil
- 1 jalapeño seeds & ribs removed, finely chopped
- 1/3 cup red onion finely chopped
- 1 pound large or jumbo precooked shrimp
- Wooden skewers
Dip:
- 3/4 cup plain yogurt
- 2 ripe mangos chopped
- 1 lime juiced & zested
- 1/4 cup fresh cilantro chopped
- 1 tablespoon honey
Instructions
- Prepare waffle batter by mixing together dry ingredients corn meal, flour, 2 teaspoons Caribbean seasoning, sugar, and baking powder in a large mixing bowl.
- In a separate mixing bowl mix together wet ingredients milk, egg, and vegetable oil until well combined. Pour into dry ingredients and mix until just combined. Mixture should be fairly thick, but add a little more milk if needed. Mix in jalapeño and onion.
- Lightly brush waffle iron with oil or spray with nonstick cooking spray if desired. Preheat waffle iron according to manufacturer directions.
- Sprinkle remaining 1 teaspoon of Caribbean seasoning onto shrimp. Place a wooden skewer in each shrimp. Dip in waffle batter, then place in waffle iron in batches. Cook about 2-3 minutes or until waffles are golden brown and crispy on the outside.
- Meanwhile, place yogurt, mangos, lime juice and zest, cilantro, and honey in food processor and process until smooth.
