In the winter, I love drinking port or red wine next to a smokey fire, with some cheese, apples, pears and grapes. A plate of beef carpaccio, a shrimp cocktail, and little clams will be nice too. I would like to have some crusty bread, with salted butter…, and a lobster, some pan seared scallops, a salad of fresh garden greens with vinegar and oil. For dessert before the port, I would like to have a big square of Tiramisu, a slice of some uniquely flavored cheesecake, slices of ripe mangoes,…. :D I’m kind of hungry right now.

slow cooker meal I made last night:

    4 chicken breasts (bonless, skinless)
    2 carrots sliced thinly
    1 can cream of chicken
    3/4 cup H2O
    1 cup wild rice

put all into crock pot turn chicken to coat, cook on low 7-8 hours or high 3-4 hours.

the chicken melts in your mouth! cheap, easy, yummy!

So, we can leave up to six comments? Just thought of another comfort food I like……..Creamed Spinach……..guess I better add spinach to my shopping list! Yum!!!!!

My fav slow cooker recipe is what I call “salsa chicken.” I put chicken breasts and a jar of store bought salsa in my slow cooker and let it go for 6 hours. I often add spinach and spices (cumin, pimenton, etc.), and maybe a can of black beans (drained), to jazz it up. When it comes out, the chicken is so tender it shreds with just a fork. I serve this over Spanish yellow rice, with shredded cheddar cheese, sour cream and other toppings we’re in the mood for. Also works in tacos as well. So easy it’s criminal.

And, my favourite winter drink is hot chocolate. Right before bed, instead of trying to put all the heaters up on high, I love to sit up cozy in bed and sip down an almost-tongue scorching hot chocolate. My favourite kind is actually hot cocoa mix from Starbucks mixed with hot chocolate mix from Ghirardelli, topped off with a perfect amount of whipped cream.

I’m from Cleveland and even though we’ve had a very mild winter, I love mixing it up with a Mexican themed night: chips with homemade salsa, quesadillas or fajitas with indoor grilled veggies, and don’t forget the margaritas! It helps to liven up cold, dreary days and gives you a break from all the heavy meat and potato based winter foods!

My favorite cold weather dish is homemade chili, our way. I don’t think there is a food with such infinite varieties as chili. No family ever makes it exactly the same. I love it on a cold day.
