After I made my Mini Strawberry Shortcake Poppers recently, I couldn’t quite get over my fascination with Pop Rocks (which would be my way of saying I couldn’t get enough of those darn little candies!!!). Pop Rocks work great to line glass rims for your favorite drinks. I had some fresh watermelon in the house AND Watermelon Pop Rocks so what was a girl to do??? I went to the nearest liquor store, bought some watermelon vodka, and next thing I knew I was making a Watermelon Poptini!
This is a great summer drink, but you can’t exactly have this Watermelon Poptini all by itself for dinner tonight can you? Ok, maybe you could, but you’ll need to eat eventually so check out my friend’s great weekly meal plans at Couponchaosmama. She has a lot of info on some great deals and coupons and she also is doing a giveaway so you could win a gift card to the grocery store of your choice! Free groceries are always nice!!!
Speaking of giveaways, my Snappy Gourmet Summer Giveway is still going on, so be sure to enter if you haven’t already. Lots of giveaways and a great summer drink; not a bad day, huh???
I’m just a poor blogger and all I ask for is a little love to keep me going.
So please don’t forget to ENTER my current giveaways for some great prizes! If you like this recipe, please follow me on FACEBOOK or TWITTER. You can also sign-up to receive my recipes and posts by EMAIL or RSS. Thanks for visiting Snappy Gourmet!
Cheers to a great summer!!!!

How fun! I can’t wait to try this!
Silly question, but where did you find the pop rocks? I haven’t seen them in ages! Granted I haven’t been looking, but I don’t remember them last time I was down the candy aisle at the grocery store either…
HI Lisa! Not a silly question! Our grocery store actually sells them in the candy aisle although I would have never noticed them if I wasn’t looking for them as they were on the bottom shelf and kind of hidden. But the first place I found them recently was at Christmas Tree Shop (not sure if you’re familiar with them? Crazy store!) and they had a “variety” pack of them with their “movie” candy!
Now Ms. Lisa…you have touched my heart….watermelon is my FAVORITE. Can’t wait to try this one out.
This is a great idea! I might have to use this for the fourth of July. Thanks!
Great idea! I saw it in Pop Rocks´ facebook page (www.facebook.com/PopRocksCandy). I´ll try it next July 4th!
Thanks Martha! Glad you enjoyed the recipe and thanks for visiting my site!
