One of my family’s favorite “snappy” dinners is French Dip sandwiches. Of course you can spend all day roasting a large cut of beef and making your own au jus, but this version only takes about 5-10 minutes and my kids can’t get enough! Sorry for the horrible pictures. I had to take these pictures at night and quickly before my kids got their hands on these sandwiches!
We all have those days when a “30-minute dinner” seems like a luxury so this meal is perfect for those nights when you have NO time. And no recipe is really necessary. If you don’t already have this entrée on your weekly dinner rotation, you may want to add it!
Cut long rolls in half horizontally and place on a baking sheet. On one side put think slices of deli roast beef and on the other side put cheese (provolone or mozzarella works well). Place it in a warm oven (or toaster oven) for a few minutes until heated through and cheese has melted.
Meanwhile, heat canned beef broth in the microwave in a measuring cup or something with a spout so you can pour into small bowls. If you want to make them a little more “gourmet” top the sandwiches with grilled onions, mushrooms, and/or peppers. You can also add some spices to the beef broth such as oregano, garlic powder, and onion powder. We also like to mix a little horseradish with mayonnaise then spread on the rolls before topping with the roast beef and cheese. Serve with some fresh veggies like carrot sticks and some cut-up fruit and you have a full meal in no time!

Wendy, my VERY picky husband loves these as do my 4 & 6 year olds. You can also assemble the sandwiches ahead of time and stick them in the fridge then heat them up in a toaster oven/oven for a few minutes. I love 5 minute dinners! Hope your family enjoys!

I love French dip! I don’t know if they still have at the Nordstrom cafes, but I would always order French dip from there. Will definitely have to try this out when I’m back in the states!
